Blue Cheese or Pickle & Roast Beef Toasties

We like to make two different versions of this:

Version one with additional blue cheese added and mayonnaise to make a creamy blue cheese and roast toastie.


Version two is sweet mustard pickle and blue cheese ranch dressing version, which is more pickle forwards, with a bit of sharpness from the ranch dressing,and a very subtle blue cheese hit from the ranch.

Both these toasties owe their special flavours to the superb Myanbah
Farm gourmet goodies; Free Range Egg Mayonnaise, Blue Cheese & Ranch Dressing and Sweet Mustard Pickle, you can spice your toastie up even more with Chipotle Mayo, Roasted Garlic or Kaffir Lime Aioli or Chilli Jam

 

Blue Cheese & Roast Beef Toastie

  • 1. Using a nice thick sourdough smear both sides liberally with the Myanbah Farm Free Range Mayonnaise​
  • 2. Add Blue Cheese, then Roast Beef and then ordinary grated cheese​
  • 3. Grind with fresh pepper or your favourite herbs then put top slice on the toastie​
  • 4. Microwave for 20 seconds, rotate and then microwave another 20 seconds, then fry in a frypan with plenty of butter or the Myanbah Chilli and Garlic Oil. You can do without the microwave but you will need to keep the frypan temperature very low to ensure the middle melts.​

Sweet Mustard Pickle & Roast Beef Toastie

Roast Beef and Pickle Toastie by Myanbah Farm
1. Smear one slice of sourdough with the Sweet Mustard Pickle, and the other with the Blue Cheese Ranch.
2. Top one of them with Grated Cheese and then the Roast Beef.
3. Add another layer of grated cheese on the top and then put the other slice of bread on top
4. Microwave for 20 seconds, rotate and then microwave another 20 seconds, then fry in a frypan. You can do without the microwave but you will need to keep the frypan temperature very low to ensure the middle melts.
5. We love to add a few slices of fresh chilli into the toastie and fry it in the Myanbah Farm Chilli and Garlic Oil to spice the toastie up a bit.

SPiked Hot Chocolate by Hunter Valley Hampers

Spiked Hot Chocolate Recipe

Order the ingredients listed at the end of the recipe to make this yourself or give someone a warming winter gift.

In summer you can use similar ingredients to make a sangria – just add orange juice and wine at the start instead of milk, and finish with lemonade.

1. Warm up some milk and/or cream (or alternatives) in a pot
2. Add in Some Sangria/Mulled Wine Spices (Star Anise, Cinnamon sticks, cloves, cassia bark and dried blood orange segment)
3. Take off the boil and rest for a while to let the flavours of the spices steep into the milk
Mulled Wine and Sangria Mix of dried fruit and spices
4. Add in Hot Chocolate
5. Spike with your choice of Butterscotch Schnapps, Spiced Rum or Rose Vermouth, or go on add all three... - per person allow 1/2 to 1 shot of each depending on how spiked you want it
6. Add Vanilla and/or cinnamon syrup to sweeten
7. Warm up the spiked hot chocolate mix to near boiling and strain into cups
8. For an extra rich drink you can top with vanilla and cinnamon syrup spiked whipped cream.
9. Garnish with a slice of dried Blood Orange

THAI STYLE KAFFIR LIME FISH BURGERS

Any Fish and Buns will work for the recipe, but I decided to go a bit gourmet, and it was worth it for the delicious taste.  I got the Buns and pre-crumbed Sealord Hoki from Woolworths, they were perfect in these burgers.

-Cook the fish in the oven, or fry,  it takes a while to cook, just follow what it says on the packet.  

-Lightly toast the insides of the Brioche Buns at about the 6 minute mark of fish cooking.

-While these are cooking prepare your salad, mixing it with plenty of the Kaffir Lime & Ginger Dressing, slice up some chillies and throw on the Chilli Mango Sauce if you like it hot.

-Slice your tomatoes and cheese if you are using it. Add the cheese onto the Buns just before they finish toasting, so it goes nice and gooey.

-Now Assemble your burger, putting your Tar 10 Kumara, Coriander & Cashew Chutney on along with the aioli lastley add the kaffir lime and coconut crusted fish and enjoy.
