Tempus Two Silver Series Cabernet Sauvignon 2019

The Silver Series imparts a level of style and sophistication to everyday drinking.

Fusing quality grapes with contemporary winemaking, wines with distinct, varietal character. The fruit was crushed and de-stemmed to varying sizes and styles where the fruit was fermented on oak at cooler temperatures which allows the fruit flavours to be nurtured and enables retention of varietal characteristics. Post fermentation most of the wine is matured in stainless steel tanks and the remaining is transferred onto French and American oak.

The Tempus Two Silver Series Cabernet Sauvignon is a medium to full bodied wine with generous length and a persistent, smooth finish. Alc 13%

Aroma: Intense aromas of dark fruits followed by hints of mocha spice.

Palate: Blackberry and plum fruit flavours dominate upfront lead by notes of cinnamon and clove. The acid is balanced, and tannins are evident, but are ripe and smooth.

TEMPUS TWO PINOT GRIS 2020

Sourced from select vineyards within South Eastern Australia, this modern and contemporary wine is fresh and vibrant. The grapes are harvested at night to retain optimum ripeness. The fruit is then pressed immediately, clarified and fermented, ensuring the pure aromas and flavours of this grape variety remain. This Pinot Gris has been crafted for immediate drinking. Whilst enjoyable on its own, it is particularly well suited to a variety of dishes from grilled seafood to a roasted chicken. Alc 12%.

Aroma: Lifted floral and pear aromas
Palate: Ripe pear flavours with a smooth lingering finish

Copperwave Distilled Gin

Copperwave Distilled Gin is distilled in the traditional London Gin method, but with one major exception. To ensure the absolute balance of the 11+ botanicals, the botanicals are distilled separately in flavour groups, then the various components are blended as would a fine wine. This allows us to ensure a high quality product, and manage seasonal variations of the botanicals.

Copperwave Distilled Gin is styled as an aromatic Gin, and is prepared at the traditional 45% alc/vol. Botanicals: The botanicals include: Juniper, Coriander, Cassia, Cinnamon, Australian Lemon Myrtle, Star Anise, Cardamom, Nutmeg and a selection of three citrus peels.
