Bouquet: Intense cherries, violets, dark chocolate and iodine.

Palate: Powerful blackberry and mulberry fruits, with an intense but mineral tannin structure.

Option 2: Audrey Wilkinson Semillion Sauvignon Blanc

The Audrey Wilkinson Semillon Sauvignon Blanc 2018 is easy to drink with a deliciously crisp finish. The bouquet has a lifted nose of lychee and tropical fruit aromas, with vibrant citrus notes. The palate is fresh and balanced, with passionfruit and guava flavours from the Sauvignon Blanc and a crisp lemon acid line from the Semillon. Audrey Wilkinson is recognized as one of the first vineyards in the Hunter Valley and has a rich history in the region. They continue today to produce wines of regional character with fine craftsmanship.

Option 4: Tempus Two Silver Series Chardonnay Pinot Noir NV

The Tempus Two Silver Series imparts a level of style and sophistication to any dining occasion.

The Chardonnay and Pinot Noir fruit were picked from premium vineyards in South Eastern Australia. The fruit was then crushed, de-stemmed and immediately clarified. Fermentation followed using selected yeast strains at a cool temperature and lasted for 2 weeks. Post fermentation the wine was racked of the ferment lees and remained on light lees to mature and develop until blended. The result is a superb, refreshing sparkling wine.  11% alc.

Palate: A zesty and refreshing sparkling wine that displays elegant, creamy texture and length with well-integrated acidity.

Aroma: Fresh cut white peach and red apple.

Cellaring: This wine is made to be enjoyed while it is fresh and vibrant.
